Fresh Salsa -- the perfect accompaniment to your Mexican dishes!

If you've ever eaten authentic Southwestern-style Mexican food, you will never be quite content with mediocre dishes, slathered with an overly-salted sauce that makes everything taste the same. It's so easy to make superb quality Mexican-style food right in your kitchen, using the freshest and finest of ingredients. You'll want to be sure to have fresh salsa, often called pico de gallo, on the side.

Vine ripened tomatoes and peppers right from your garden is what will set this dish apart from anything you can buy. Pair it up with Chicken Fajitas and Guacamole for over-the-top deliciousness!

When choosing your ingredients, use home-grown, grass-fed and organic ingredients whenever possible.


1 small onion

¼ of med green bell pepper OR 1 jalapeno, deseeded

½ cup loosely packed fresh cilantro (optional)

1-2 TBSP freshly squeezed lemon or lime juice (use lesser amount, then taste test)

2 garlic cloves

½ tsp sea salt

2 cups Roma tomatoes, seeds and pulp removed, OR 2 cups grape tomatoes, divided



  1. Cut the onion into quarters. Cut the jalapeño pepper crosswise into thirds (deseed if desired).

  2. Chop all ingredients and combine. Or, to use the Pampered Chef Manual Food Processor: Combine the onion, jalapeño (to taste), cilantro, lemon (or lime) juice, garlic and salt in the . Pump the handle until coarsely chopped. Add half of the tomatoes and pump the handle until coarsely chopped, remove the lid and scraping down the sides of the bowl as necessary.

  3. Add the remaining tomatoes and stir in (or pump the handle to chop to the desired consistency).  

  4. Serve with tortilla chips or to top any of your favorite Mexican dishes.​​​​​​​​​
