Homemade Treats....!

Recently I said to my almost 3-year-old granddaughter, "Grandma wants to make a treat for you tomorrow. Think about it and then give me a phone call tonight and tell me what you want." Later that evening (with the help of a big sister), I got a phone call that was straight to the point:

"Grandma, I want you to make peanut butter popcorn!"

It so happened the next day was rainy and therefore, a fun day to be putzing in the kitchen (since I couldn't work in the garden). I pulled out an old recipe that has had only a little remake of the original recipe I made for our children back when we were living in Indonesia. How fun that the same good memories can now be passed on to my grandchildren!

When choosing your ingredients, use home-grown, grass-fed and organic ingredients whenever possible.

1/2 cup unpopped popcorn kernels

(Note: For a less sweet popcorn, use 2/3 cup unpopped popcorn kernels)

½ cup brown sugar, organic (100 grams)

½ cup honey or brown rice syrup (168 grams)

1 tsp sea salt

½ cup peanut butter (128 grams)

½ tsp vanilla

  1. Directions:

  2. Pop the popcorn kernels in an air popper or in a heavy pan with oil. Remove any un-popped kernels. Set aside.

  3.  In a heavy saucepan, combine the sugar, honey or brown rice syrup and salt. Bring to a boil, stirring constantly. Boil vigorously and stir for exactly one minute. Remove quickly from heat source.

  4. Stir in peanut butter and vanilla. Pour immediately over popcorn and stir with large spoon or silicone spatula, coating evenly, working as quickly as you can while the syrup is still warm.

  5. That's it! So easy. This popcorn will be a little sticky – it's meant to be enjoyed right away.

Serving Yield:

Approximately 16 cups
